Macadamia Coconut Granola

My granola recipe is an absolute favourite in my family. This grain free, refined sugar free recipe is super quick and easy  to make - and it's so yummy!

Enjoy it as a healthy treat or snack like we do, or have it as an indulgent breakfast with Greek yoghurt and berries. I love it with just cold, fresh almond milk and raspberries! 

 

Ingredients

1 cup macadamias

1 cup almonds

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup almond meal

1/3 cup coconut oil

3 tbs honey or 4 tbs rice malt syrup

1/2 cup coconut flakes 

1 tsp cinnamon 

1 tsp vanilla extract (or fresh vanilla bean)

small pinch of sea salt

Optional (cranberries)

 

Method

Pulse all nuts and seeds in a food processor until it is a slightly chunky consistency. Some of it will turn into a fine meal, which is what you want. 

Add the almond meal, cinnamon, vanilla and a small pinch of salt to the nut mixture

Heat the coconut oil and honey together in a saucepan on low to combine

stir in the coconut oil/honey to the mixture and spread out onto a lined baking tray

Cook in a 165 Degree Celsius oven for 10 minutes. Stir the mixture around and press it back down in the tray evenly. Cook for another 10 minutes or until golden brown. 

Let the tray cool and then pop it in the fridge or freezer until it has set.

Break up the mixture into small chunks and stir through the coconut flakes and cranberries

Serve with your choice of milk, yoghurt and fresh berries.
