Whether you're doing the 2 Week Spring Cleanse or you just love a crunchy salad, this is the perfect Spring recipe. I love this salad as it keeps really fresh for days, so you can have it thorughout the week for lunches or dinners. Not only is it loaded with a range of different vitamins, minerals and fibre from all the veg, the miso dressing provides some good bacteria for your gut health.

Ingredients
¼ wombok, finely sliced
¼ red cabbage, finely sliced
1 red capsicum, cut into match sticks
1 small fennel, finely sliced
1 green apple, cut into matchsticks
1 handful of snowpeas, cut into thin strips
1 carrot, julienned or grated
Handful of mint, shredded finely
Miso dressing
1 tbs white miso paste
1 tbs olive oil
2 tbs apple cider vinegar
¼ tsp tamari (gluten free soy sauce)
¼ tbs honey or maple syrup (omit for those doing the 2 week Cleanse)
Mix all ingredients in a small bowl
Top salad with the dressing, cashews and serve with your choice of protein
